Gypsum is often used in the mash tun to lower mash pH. The added calcium is good for yeast health and sulfates crispen the hop bitterness. Gypsum deposits made Burton notorious for their pale ales! Usage is water dependant; typically 1-2 tsp (4-8g) per 5 gallon batch.
